Every now and again, whilst we’re out foraging, we discover a flavour which needs to be shared.
This time, it was the seeds from one of our coastal favourites: Rock Samphire.
Flavours from these seeds are reminiscent of burnt orange with a saline undertone, and it seemed fitting to brew an Autumnal saison, with a few handfuls of orange peel thrown in for good measure.
Fermented with our house cultures, a gentle acidity balances the saison base
and lets these wild flavours do the talking.
